These pie iron recipes are so easy the kids will want to do one on every camping trip.

Easy Sausage and Egg Breakfast Pudgie Recipe
This campfire treat is cooked with a cast iron or aluminum pie iron, over medium campfire coals or flames.
Here is all you need for this camping breakfast:
- Unless it’s just the two of you, one pie iron is never enough. You should have at least two, and a double pie iron speeds things up.
- 2 pieces of bread per sandwich
- Butter/Margarine
- Sausage, (brown n’ Serve patties make life easier)
- Cheese, (shredded or sliced)
- 1 egg per sandwich
- *Note: Oiling or spraying the inside of the pie iron, (in addition to the butter on the bread), will make these sandwiches easier to pop out when done.
Tip: A good pair of campfire gloves is almost a must-have for any type of campfire cooking. Here is a guide to some good choices for campfire cooking gloves.
The basic steps:
- Heavily butter one side of each piece of bread
- Also pan spray or lightly oil the pie iron too – it helps the sandwich pop out without sticking.
- Fig. 1 (at left), shows the quick-fix slice cheese and sausage patty layout.
Fig. 2 shows the better and preferred method. The shredded cheese and crumbled sausage help the scrambled egg spread more evenly over the whole sandwich.
The crumbled sausage can be freshly fried sausage crumbles, or just crumbled Brown n’ Serve sausage patties.
*Note: Use your fingers to slightly depress the bread on the inner edge of the crust – all the way around the slice. It will help keep the scrambled egg from running over the edges.
- Scramble one egg per sandwich, salt & pepper to taste, and gently pour over the sausage and shredded cheese. (or just the sausage patty if you took the lazy route)
- Trim off any excess ingredients when the pie iron is closed.
- Cook over medium coals, or low campfire flame, (or even camp stove burners). Rotating every minute or so. The sandwich should only take about five minutes once the pie iron gets hot.
- *Caution: cooking over direct flame usually means a burnt sandwich instead of faster cook time.
- *approx. times – use judgment – pie irons can be closed and re-cooked if you want them more well-done.
- Open pie irons and use a spatula to remove the sandwich.
- CAUTION! Pie irons will be very hot. And, the insides of the just-cooked pudgie, (sandwich), will be very hot! Do not let young kids try to handle them until they have time to cool – which should only be a few minutes.

Note: Olive oil or pan sprays can be used instead of butter/margarine.
Tips:
★ Impress the kids and make the evening campfire and story time a colorful light show with colored campfire flames.

*Basic principle is the same for all recipes:- butter bread and/or spray oil pie iron, or use olive oil, and rotate the pie iron while cooking. Most recipes also use a 3 – 5 minutes per side cooking rate but use your own judgment.
